Healthy Summer Sandwiches

Ingredients and Preparation

Smoked Salmon Sandwich (1 open-faced sandwich, 5 minutes)

  • rye bread (or any other whole wheat bread)
  • 1 teaspoon Dijon mustard
  • rucola
  • few slices smoked salmon
  • few slices cucumber
  • 3 cherry tomatoes cut in wedges

Spread 1 teaspoon mustard over bread slice. Top with rucola and the following ingredients. Season with salt and pepper if needed.

Prosciutto Sandwich (1 open-faced sandwich, 5 minutes)

  • rye bread (or any other whole wheat bread)
  • rucola
  • 4 slices goat cheese
  • 2 slices prosciutto
  • 3 cherry tomatoes cut in slices
  • balsamic glaze

Top bread slice with rucola. Continue with goat cheese, ham and the cherry tomatoes. Drizzle the sandwich with balsamic glaze.

Fried Egg Sandwich (1 open-face sandwich, 10 minutes)

  • rye bread (or any other whole wheat bread
  • rucola
  • 4 cherry tomatoes cut in slices
  • 1 egg
  • chives
  • salt and peeper

Fry a medium size egg in a pan. In the meantime, make the layer starting with rucola. Top with cherry tomatoes. Remove the egg from the pan and add to the sandwich. Season with salt and peeper and chives. Serve while still warm.
